A delightfully light gluten-free and gum-free cake flour perfect for all cakes. Let us eat cake!


Cakes are my favorite. They denote something special, magical, and playful with their many forms and numerous fillings and toppings. Let's day dream for a moment, shall we?

Layered, bundt, coffee, sheet, short, cup, upside-down, dump, ice box, Swiss roll, pound...

Chocolate, vanilla, strawberry, peanut butter, cream cheese, meringue, marzipan, ganache, lemon curd, jam...

I could go on and on...but there is cake to be made!

Gluten-free cakes can be quite marvelous in their own right. They have no gluten, and actually, gluten is troublesome for a lot of traditional wheat-laden cakes because it makes them too dense and heavy. So, gluten-free baking really has found its perfect home in cakes! Here is my light-weight gluten-free, gum-free cake flour blend that delivers spectacularly time after time. I like to refer to this blend as Cake-on-Board!


  • 1 cup oat flour (130 grams)
  • 1 and ½ cup sweet rice flour (260 grams)
  • 2 cup potato starch (335 grams)


  1. Into a large bowl, add the ingredients of the flour blend. Be certain to measure accurately (if using measuring cup, then lightly scoop and then level off to the top of the cup using either finger or butter knife).
  2. Using a fork or a whisk, combine ingredients well. Scrape the bottom of the bowl several times to be certain all flour ingredients have been well incorporated.
  3. Pour flour blend into storage container and affix lid tightly.
  4. Use flour blend for your selected cake recipe. Might I suggest our Swiss Roll?


  • One level ½ cup of Cake-on-Board Gluten-Free Cake Flour Blend is equal to 97 grams.
  • To make a gluten-free version of our British Self-Raising Flour, use ½ cup (97 grams) Cake-on-Board Gluten-Free Cake Flour Blend plus 1 tsp baking powder. This will yield 100 grams of self-raising flour for all of your British-style cake recipes. Cheers!
  • Store flour blend in cool, dry place, away from direct sunlight.
