Hi all! Let me quickly introduce myself, I am Katherine’s Twinkie aka Mollie aka Fitfabfodmap girl. We met through Instagram which sounds insanely creepy but the amount of similarities and life experiences we share is the creepy part!

I have taken over Katherine’s blog to show you how to make the most simple and healthy summertime popsicles. There are only 3 ingredients which are all fodmap safe and in season. I promise these babies will be in your freezer in less than 5 minutes! Set your timers…

Note from Katherine: Hi, y'all. My friend D recently shared with me that she is in remission (rejoice!) from leukemia. To maintain remission, she is following a high-immunity, cancer-fighting diet full of vitamins and null of sweeteners other than those naturally occurring in fruit and coconut. Mollie is the queen of all things coconut, so I asked her to create a sweet recipe that D could indulge in when she gets a dessert craving. This recipe fits the bill to a T!


  • 12 strawberries, stems cut off
  • 1 banana, chopped
  • ½ cup pineapple coconut water (I buy mine at Central Market; such as Naked)


  1. Place ingredients in blender and pulse until combined.
  2. Pour into Popsicle molds and freeze for at least 4 hours before eating. (I was able to almost fill up 6 molds)
