It's 77 degrees in Galveston, Texas, eight days before Thanksgiving! Despite these balmy temps, we love our traditional holiday fare, especially when it is fresh and aromatic...and served alongside football, family, and pie! This year, join my Mr. Wonderful and I as we create a meal plan that everyone with food issues will enjoy - all are dairy- and gluten-free and low-FODMAP, most are migraine-friendly and nut-free, and many items are also vegan.

  1. Research - think of this as the first rung on the winding staircase of mise en place
  2. Order turkey and extras that you don't want to make (we've ordered a traditional and another gluten- and dairy-free pie from Old Moon Deli in order to lessen my baking load and not cross-contaminate my kitchen with traditional flour) - 7 days in advance
  3. Make Cranberry-Citrus Compote, Collard Greens, Boozy Vegan Mashed Potatoes, Vegan Candied Sweet Potatoes; refrigerate several cans of coconut milk (prep for Gum-Free Coconut Whipped Cream) - 3 days in advance and refrigerated until day of
  4. Brine Texas Smoked Turkey - 24 - 48 hours in advance and refrigerated until day of
  5. Make Cast Iron Skillet Cornbread Cake, Pumpkin Pie for Emily, Gum-Free Coconut Whipped Cream; pick up to-go orders (we will snag a few sides of vegan and gluten-free rice pilaf from Zoe's Kitchen - did you know they have curbside pickup?) - 1 day in advance and refrigerated until day of
  6. Fire up smoker for Texas Smoked Turkey - morning of
  7. Smoke Texas Smoked Turkey and have a few rounds of beer or champagne with friends and family - day of
  8. Make Broccolini with Lemon Dressing, Carrot Fries, Caramelized Brussels Sprouts; reheat other sides - 1 hour before serving meal
  9. Carve Texas Smoked Turkey - seconds before serving meal - hurry up, now, your dining crowd is getting restless!
  10. Winners take naps! To quote Fresh Off the Boat's Louis Huang, "I'm gonna take a bed nap and a couch nap that day."
